This Mutton curry I learned by my Father. The taste of this dish is totally dependent on the "Garam Masala" which was his own creation.
Ingredients for Garam Masala
50 gm Saunf ( Fennel seed)
4-5 Green Cardamoms
2" Dalchini ( Cinnamon)
5-6 Laung ( Cloves)
Ingredients for Mutton Curry
1/2 kg Mutton
2 big Onions finely sliced
2 big Tomato chopped
1 tsp Garlic paste
1 tsp Ginger paste
1/2 tsp Turmeric powder
1/2 tsp Coriander powder
2-3 tsp Kashmiri chilli powder
1 tsp red chilli powder
1 tsp garam masala ( above said)
Salt as per taste
Oil

Method for garam masala
- Heat a pan dry roast all ingredients mentioned in garam masala till it gets little brown.
- Let it cool. Make a fine powdered of it.
Method for Curry
- wash the mutton and put in a pressure cooker with salt ,turmeric and half cup of water cook till it done. ( Approximate 4-5 whistle). Let it cool.
- Heat a oil in a pan add sliced onion fry till it turns brown now add ginger garlic paste and saute for few minutes or till raw aroma disappears.
- Add Tomato saute till it gets soft.
- Make a paste of turmeric powder, red chilli powder, kashmiri chilli powder, coriander powder and salt with little water and mix in tomato and saute till oil comes up.
- Now add cooked mutton in it with water, cover it and simmer for 10-12 minutes.
- Add garam masala and continue cook for more 5 minutes or gravy get little thick.
- Garnish with chopped coriander leaves.
- Serve with Paratha or Rice.
