METHI BAIGAN KI SABZI

Ingredients

 Methi leaves -  1 bunch
Baby brijals  -   4 
Cumin Seeds- 1 tsp
Oil
Salt as per taste
Red dry chilli - 2
Turmeric powder - 1 tsp
Sugar a pinch

Method
 

  • Cut brinjal into cubes. Wash methi leaves thoroughly, chop roughly and keep aside.
  • Heat oil in a kadhai. Deep fry the brinjal pieces and set aside.
  • Heat 1 tablespoon oil in a pan. Add cumin seeds and Dry red chilli. Once the cumin seeds begin to crackle, add the washed methi leaves. Cover and cook for a while.
  • Add Turmeric powder, salt and a pinch of sugar and cook till done.
  • Add the fried brinjal and cook for another 2 minutes. Serve hot.
